Tanya Nguyen opened Chu Minh Sandwiches & Coffee on MLK Way in 2024 as a second location of her family’s beloved Vietnamese plant-based kitchen. Her parents brought their tofu-making tradition from Vietnam to Seattle in 1994, and Tanya took over and grew the business, opening the original Chu Minh Tofu & Vegan Deli in 2011. This spot focuses on vegan banh mi and Vietnamese-style sandwiches paired with coffee, all made with the same house-crafted tofu the family has been perfecting for decades.
